You could use the kill switch function of vesc fw5.3, see here: [Flipsky 75200 ESC wiring - #3 by SoEFoil](https://foil.zone/t/flipsky-75200-esc-wiring/16399/3)  
This would not entirely switch off the vesc but there is no risk to destroy it this way.
