Not sure how to setup remote calibration so power is given as remote trigger is compressed from slow to fast. As its setup now when pressing trigger its at full power no matter how much trigger is pressed. Any suggesstion would be much appreciated!

You can test with a large container of water. Just be careful because eFoil motors will move quite a bit of water and make quite a bit of thrust. A dock or pool is an easy way to test a motor/esc/remote are working. Just lay down something to protect the board and have the mast over the edge into the water (probably with no wing attached). Sit on the board to keep it still and give the trigger a squeeze

In control modes BLDC and FOC the throttle controls current, the motor goes from zero to full rpm almost instantly when it has no load as the max current needed is around a few amps and the full throttle span is giving from zero to maybe 100A.
In duty cycle mode the voltage is instead controlled so the throttle gets the motor from zero to full speed over the throttle range, even without load.
Current control is generally a better control method for most riding as it gives you the torque corresponding to your throttle.
