Looks like the Samsung 50E is a 10A cell, that’s still on the low end for efoil. These are also used cells, can sometimes create issues with balancing and having full capacity.
I think these are the best deal I can find right now, at least in the USA: EVE 40P 21700 4000mAh 50A Battery
Those are actually cheaper than the eBay cells you linked, and they are 50Amp cells that can easily power an eFoil

I assume that with these batteries I’ll have all the specs needed to use the Excel file we have here to figure out how many series in parallel I’ll be needing, right?
With the EVE 40P 50A cells, at a 14S config (Maximum that’s recommended because of the 60V safety limit) even a 3P pack could deliver enough current/power
14S5P will give you 1kWh of energy, enough for about 1h ride time and more than enough power even for rifle case starts @6-7kW

FLIPSKY FSESC 75300 84V High Current 350A I already have, if I go with 14S, wouldn’t be a good idea to go with even a higher P? let’s say 6 or 7, or even 8? or it’d be too much?
You can go as high as you want!
However, you need to find space in your board and strength in you arms and back to accomodate that 
I personally prefer smaller, ligther battery and have multiple ready - so I can do a short break riding and just switch batteries
Others like to ride 2-3kWh batteries for 2-4h non-stop 
So if I’m understanding well you have battery replacements for your efoil? Like an extra battery that a person would use for a power tool like a drill or a cutting saw when the first battery is dead?
Yes, I built multiple packs
Smallest has 500Wh for travelling
Biggest 1.7kWh for tours
All the same connector, so easy to use the one I feel like that day
Adds a bit of work and cost building multiple, needing connectors and so on for each of them
But saves weight in the board you have to carry into the water and adds a bit of redundancy
I would recommend start with one pack of 1-2kWh, then see what the future holds

That sounds like something I might want to do in the future for me. Having battery replacements sounds actually as a great solution in case I’d like to use the efoil for a whole day or so.
I bought 84 EVE 40P 21700 4000mAh 50A batteries thinking on a 14S 6P set.
Do you have any recommendations on a good BMS I should get given these specs?

Any jkbms will be fine, 50A or so, only for charging

Let me ask you something else, if you’d be so kind: if I want to go all the way with my supplies, and considering that I already have the FLIPSKY FSESC 75300 84V, and the 84 EVE 40P 21700 4000mAh 50A batteries on their way, would it be a good idea to get a new motor like, for example, the Flipsky 90165?
That’s the other end: overkill
I would just go with the trusted old 65161
I am struggling with handling the force of this one at 6kW already, hard to keep the nose down
Also 90165 is probably heavier, making the board harder to carry again
