If this is advisable to run at full motor speed to save on ESC, would 8:1 be an advisable reduction versus 6:1 or 4:1 ?

Not with that motor. You want to have a prop rpm of at least 3000.
3000 is nice on load so maybe 3600rpm with 56 and 4000 with a 40mm in the air
