Very Basic Questions about Dual ESC's

I’m designing/building a one person hydrofoil boat, which I intend to power with two inrunner motors . The motors will be at the rear and spaced a couple of feet apart, the idea being that I can steer the boat by supplying differential power to the motors. My question is this - if I get an ESC like this https://flipsky.net/collections/electronic-products/products/flipsky-dual-mini-fsesc6-7-90a-base-on-vesc6-6-with-aluminum-anodized-heat-sink , can I control each of the outputs independently, and also, when it says 140 amps continuous, is that the total, or can it handle 140 amps on each side ?

Better ask question to flipsky , normally you need to connect the « 2vesc » via a can cable
So yes normally you would have control on each motor if you use 2 remotes
But at this point I would get just 2 vesc with a better high amp rating
