Very lightweight SUP Setup and possibility to convert to a tow boogie

I have been experimenting with SUP since three years and this is the latest build which performs really well. I have used 70A rated AM32 ESCs mounted on heat sinks. A really good waterproof case from home depot which has thick gaskets that are much better than gaskets in the waterproof grey junction boxes I used before. The case is very low profile so very stable when tied down on the board.
I used 4208 brushless motors which are drawing 30A each with a 80mm propeller. I have no issues with ESCs overheating now. The heat sinks get warm after few minutes of use and perform as expected.

It is a 6s setup with 48 molicel p28A. but in future I am planning to convert it to 12s and use it as a tow boogie to get into foiling. The current setup performs great and is able to get up to 10km/hr. Would this speed be enough to get foiling using a kite foil or wing foil board?

Not sure which lightweight motors I can use for 12s setup. Difficult to find a low kv motor that is also small. Planning to use HAKRC 7155 ESCs rated for 120A which are really cheap and look well built and would fit into this same case. Any experiences with this ESC?
